In terms of gaining some sailing knowledge look for the book: "Royce's Sailing Illustrated" by Patrick M. Royce. It may be out of print but can be obtained from a used book store.

Dave Masland's BLOG on the build out of his NUTMEG gives some sail making hints and the White Poly Sail site even has kits with instructions.
